Sweet Cashew Chutney


From the house of my friend Divya en Kannur we rescue 3 chutneys recipes that complement any rice, potato or vegetable dish. I enjoy the easy and quick to put them together. Makes one cup full, good for 6 people. Divya serve them with idles an a delicious rice pancakes.

Ingredients:
1  cup red onions.
1/2 cup of raisins

1/2 cup raw cashews
1 small garlic head
3 tsp of jugery ( sugar cane) or any sweet.
1 tsp salt
2 tsp of coconut oil.
1/2 lime juice
1/8 cup of water or more to soft the consistency.


Procedure
Cut the onions very fine and fry  them in the coconut oil until caramelize in medium heat. set aside. Saute the cashew and the raisins for 2 minutes in coconut oil.
Blend together all the ingredients until forming a smooth paste. Serve immediately.
